Traditional New Year “Vasilopita” cake made with 100% soft ZEA LIFE-GIVING whole-milled stone-ground flour from Greece!
- 18oz (510g) soft-ZEA flour (one 18oz bag)
- 1 cup unsalted butter
- 1 cup of turbinado raw sugar
- 4 large eggs
- 4 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon orange peels
- 1 tablespoon honey
- 1 teaspoon cinnamon ground
- 3/4 cup of fresh orange juice
- 3/4 cup of milk
- Powdered sugar
For best results all the ingredients should be at room temperature.
Pre-heat the oven at 356F (180C).
In a bowl (A), mix together the ZEA flour, the baking powder, the orange peels and the cinnamon.
In an another bowl (B), stir together the butter, the sugar, the honey and the vanilla extract for 5 minutes.
Continue stirring with adding the eggs with intermediate stirring in between so that each egg is completely absorbed in the mixture before adding the next one.
Add the orange juice and the milk and stir for about 2 minutes.
Continue with gradually adding the contents of bowl A into bowl B and stir all the ingredients together so that they become a uniform mixture, for about 5 minutes.
Lightly grease a 10in (25cm) springform pan with butter or olive oil.
Transfer the Vasilopita cake mixture into the springform pan and spread it with a spatula. Don’t forget to add a lucky coin in the mixture!
Bake for about an hour and until the internal temperature of the cake becomes about 180-200F (82-93C) degrees.
Once baked let the cake set at room temperature and then remove the sides of the springform pan. Sprinkle the cake with powdered sugar.
